How to Make Smoked Oysters

- Worcestershire sauce — 2 ½ tbsp.

Ingredients

- Salt and pepper —  to taste.

- Oysters — 30 pcs.

Preheat your smoker to 225 degrees.

Instructions

Using a shucking knife, carefully shuck the oysters.

Set the shells aside for now.

Add the oysters to a mixing bowl with their liquor, salt, and pepper.

Let it marinate for half an hour.

In the meantime, wash the shells carefully.

Place the oysters in shells.

 Transfer the shells to your smoker, and smoke for between 1 and a half to 2 hours, until the oysters reach your desired texture.

Pour Worcestershire sauce on each shell before serving.

Substitutions

BBQ Don’t fancy smokers? You can always use a BBQ to grill the oysters and end up with the same delicious treats.

Smoker.

Shucking knife.

Medium-sized mixing bowl.

Measuring spoons.

Notes

Choosing the right wood  If you’ll be using wood chips, make sure that you go with either cherry wood or alder. 

Use a wire rack Since oysters are small, they might slip through the grill gate. To avoid this, use a wire rack.
