Instructions

  1. Combine the eggs, cream of chicken or mushroom soup (whichever is available), mayonnaise, shredded chicken or turkey, cheese, black pepper, and salt in a large bowl.
  2. Mix everything properly until combined.
  3. Make sure the marinade coats the shredded chicken evenly.
  4. Steam a pack of frozen broccoli for at least 10 minutes until tender.
  5. Grease the baking dish with olive oil.
  6. Spread half of the package of steamed broccoli into the baking casserole. Then, scoop half of the creamy mixture over the top. Spread it fairly to fill the dish.
  7. Layer the rest of the pack of broccoli over the top and pour the remaining creamy chicken mixture over it to form two layers.
  8. Heat the oven to 375°F degrees.
  9. Bake the dish for 35-40 minutes until it becomes golden brown and the cheese is all bubbly and melted.

Substitutions

  • A can of chicken soup — If there is no mushroom soup in the pantry, cream chicken soup can be a great substitute. Although it slightly alters the taste, a can of chicken soup can still provide a creamy base consistency like mushroom soup.
  • Greek yogurt — Using Greek yogurt as an alternative to mayonnaise adds nutritional benefits to the dish. It is a good calcium, probiotics, and protein source.

Variations

  • Spicy Nixon chicken — To add spice and heat, add a tablespoon of sriracha or chili garlic to the marinade. Sprinkling red pepper flakes is also a top-notch choice.
  • Sweet Nixon chicken — Adding two tablespoons of honey and a teaspoon of grated ginger can make the Nixon Chicken more aromatic and sweeter.
