Smoked Oyster Recipe — Delicious

Equipment

  • Medium sized mixing bowl

Ingredients
  

  • 30 pcs. oysters
  • Salt and pepper to taste
  • 2 ½ tbsp. Worcestershire sauce

Instructions
 

  • Preheat your smoker to 225 degrees.
  • Using a shucking knife, carefully shuck the oysters.
  • Set the shells aside for now.
  • Add the oysters to a mixing bowl with their liquor, salt, and pepper.
  • Let it marinate for half an hour.
  • In the meantime, wash the shells carefully.
  • Place the oysters in shells.
  • Transfer the shells to your smoker, and smoke for between 1 and a half to 2 hours, until the oysters reach your desired texture.
  • Pour Worcestershire sauce on each shell before serving.

Notes

  • Choosing the right wood — If you’ll be using wood chips, make sure that you go with either cherry wood or alder. These two not only have a pleasant smoke and taste, but they also do not overshadow the taste of your smoked oysters, which makes them ideal.
 
  • Use a wire rack — Since oysters are small, they might slip through the grill gate. To avoid this, use a wire rack.
