Using a shucking knife, carefully shuck the oysters.
Set the shells aside for now.
Add the oysters to a mixing bowl with their liquor, salt, and pepper.
Let it marinate for half an hour.
In the meantime, wash the shells carefully.
Place the oysters in shells.
Transfer the shells to your smoker, and smoke for between 1 and a half to 2 hours, until the oysters reach your desired texture.
Pour Worcestershire sauce on each shell before serving.

Choosing the right wood — If you’ll be using wood chips, make sure that you go with either cherry wood or alder. These two not only have a pleasant smoke and taste, but they also do not overshadow the taste of your smoked oysters, which makes them ideal.
Use a wire rack — Since oysters are small, they might slip through the grill gate. To avoid this, use a wire rack.
