Ingredients
  

  • ¼ cup yellow onion medium-sized, chopped
  • 4 cups chicken broth
  • 3 cloves garlic
  • 1 lb. Roma tomatoes chopped
  • 1 cup water
  • 1 pc. carrot large, diced
  • 1 pc. zucchini medium-sized, sliced
  • ¼ tsp. black pepper
  • 1 pc. avocado large, sliced
  • 1 tsp. salt
  • 1 lb. ground beef
  • 2 tsp. cumin
  • 2 cups shell pasta
  • 2 tbsp. avocado oil
  • 1 pc. lime juice medium-sized
  • 2 tbsp. cilantro chopped
  • 1 stalk celery diced
  • 1 tsp. oregano

Instructions
 

  • In a blender, add the tomatoes, garlic cloves, chicken broth water, and onion. Blend it until a smooth consistency is formed. Strain it with a strainer. Place it aside.
  • Cook the shell pasta in preheated oil for almost five minutes. When cooked, strain and set it aside to cool down.
  • In the same pot, cook the chopped vegetables. Then add the ground beef and all the other seasonings. Cook it until browned.
  • Now add the pasta and tomato broth you prepared earlier. Cook it on low flame until the pasta is fully cooked.
  • Top the pasta with cilantro, lime juice, and avocado. Serve hot.

  • Use a big pot while cooking so that everything is cooked thoroughly and has enough space.
