Fill a large stock pot with enough water and bring it to a boil.
Add all your ingredients into the pot, except for Everclear.
Let it simmer for about an hour, covered.
Once that is done, remove it from the heat. Let the mixture cool to room temperature.
Follow by adding the Everclear to the mixture, and stir well.
Pour the mixture into mason jars after straining the cinnamon sticks.
Transfer the jars to a dry, cool, and preferably dark place.
Give your apple moonshine mash between 8-10 weeks to mature.
