- 1 pc. onion medium-sized, chopped
- ¼ tsp. garam masala adjust to liking
- 2 tbsp. oil
- 1 pc. green chili pepper chopped
- ¼ tsp. turmeric powder
- Cilantro for garnishing
- ½ tsp. cumin seeds
- Salt to taste
- 1 tsp. red chili powder
- 1 pinch mustard seeds optional
- 1 sprig curry leaves
- ¾ cup tomato chopped
- 1 tsp. ginger chopped
- ¼ cup coconut milk
- 1 tsp. coriander powder
- 1 pc. yellow squash medium-sized, cubed
Heat some oil in a pan.
Add the curry leaves, cumin seeds, and mustard to the pan.
Then sauté the onion, ginger garlic paste, and green chili pepper.
After sauteing these ingredients, add the tomatoes and form a gravy.
Add the squash and all of the seasonings. Cover the pan with a lid and cook it. You may need to add a little water to it.
After cooking up the squash, add coconut milk to thicken the gravy and let the gravy simmer for a few minutes.
Turn off the stove and then garnish the curry with coriander powder.
Serve with plain rice or any other side.
