Heat some oil in a large pan, transfer the tofu to it, and add salt and pepper.
Sauté the tofu until golden, which should only take a few minutes.
Remove from the heat and set aside.
Combine all the sauce ingredients in a mixing bowl.
Heat vegetable oil in the same pan.
Cook the onion and the garlic for a minute. Afterward, do the same for the mushrooms and the bell pepper.
Transfer the tofu back to the pan and pour the sauce mix on top.
Stir well.
Add the mayonnaise.
Serve hot.

Make ahead — If you always find yourself short on time, you can drain and shape the tofu into cubes, mix the sauce ingredients, and store them in your fridge. Just keep in mind that a night should be the longest that you store them.
Press the tofu — Draining the tofu is absolutely key to making this Lutong Pinoy recipe. While you could, technically, do that using your hands, you could also consider purchasing a tofu press for this purpose.
