Cut the stems from the eggplant, and thinly slice it.
Sprinkle kosher salt and black pepper over the sliced eggplant.
Transfer the eggplant slices to a baking tray.
Gently and swiftly brush the marinade on both sides of the eggplant slices.
Roast for 20 minutes per side.

The roasting — Compared to regular eggplant, Graffiti eggplant has a tender skin, and as a result, it tends to burn quickly. Keep a close eye on the eggplant and make sure to remove it from the heat once it is golden brown
The eggplant — Because of its tender skin, when it comes to using oil, the best approach would be a minimal one. Try not to go overboard with the oils and sauces, as your eggplant might end up becoming soggy.
