Ingredients
  

The cake

  • 3 cups all-purpose flour
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • 2 cups sugar
  • 1 cup walnuts
  • 3 pcs. eggs
  • ½ tsp. salt
  • 3 cups apples peeled and diced
  • 1 cup raisins
  • 1 tsp. vanilla extract
  • 1 cup cooking oil
  • 1 tsp. baking soda

The glaze

  • ¼ cup milk
  • 1 tsp. vanilla extract
  • ½ cup brown sugar
  • ½ cup butter

Instructions
 

  • Set your oven to 350 degrees.
  • Combine the flour, salt, baking soda, nutmeg, and cinnamon in a mixing bowl. Stir well.
  • Using another mixing bowl, combine the sugar, oil, vanilla extract, and eggs. Stir until smooth.
  • Combine the dry and the wet mixtures in a single bowl.
  • Make sure to stir until smooth.
  • Add the apples, raisins, and chopped walnuts.
  • Transfer the batter to a lightly greased baking pan.
  • Bake for 45 minutes.
  • In the meantime, melt the butter in a pan.
  • Add the milk and brown sugar.
  • Bring them to a boil and stir for two minutes.
  • Remove from the heat. Add the vanilla extract.
  • Once your cake is baked, give it ten minutes to cool down. Then, pour the caramel glaze mixture over the cake.

  • The ingredients — When it comes to the ingredients, we would recommend you stick with ingredients at room temperature. They will bond much easier, resulting in a smoother batter with a better texture.
 
  • The apples — Admittedly, you would be fine using any apple you have, when it comes to our Apple Mortgage cake recipe. Still, you might be better off using tart ones. The texture would be much better.
