In the same pan, combine the onion, celery, garlic, and carrots.
Cook until tender and browned about 10 minutes.
Add the wine and thyme sprigs.
Bring to a boil and cook on low for 8-10 minutes.
Add the chicken stock and the smoked ribs, and bring to a boil.
Set your oven to 325 degrees and cook for 2 ½-3 hours.

Thicken it — Once you add the red wine and bring the mixture to a boil, you might have realized that the liquid may have been reduced by up to half. If you think your dish is in need of thickening, add some tomato paste to the mix.
Go with bone-in — It seems like boneless short ribs are also a thing. While you could still go for those in Masterchef’s beef short ribs recipe, the dish is at its best when done with bone-in ribs. The bones provide a definite unique flavor.
