Ingredients
  

  • 2 tbsp. olive oil
  • 3 pcs. minced garlic cloves
  • 1 pc. medium sliced lemon
  • 4 tbsp. salted butter
  • ¼ cup chopped parsley
  • 3 oz. one capers bottle
  • 1 cup cooked jasmine rice
  • 2 lb. snapper
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions
 

  • Dry the snapper using a paper towel, and then cook the snapper in a skillet using olive oil for about 5 min. On each side.
  • Remove the snapper from the skillet. Using the same skillet, melt the butter. Caramelize the lemon slices in it and then take them out onto a separate plate.
  • Cook the garlic cloves for 1 min. in the same skillet, and then add the capers and snapper. Cook them for 3 mins.
  • While the snapper and sauce are cooking, warm up the cooked jasmine rice.
  • After the sauce and snapper have been cooked perfectly, take them out and sprinkle salt and pepper on them.
  • Serve the snapper over a bed of cooked jasmine rice.
  • Garnish the mangrove snapper using chopped parsley and the caramelized lemon slices on top before serving.
