Combine the egg white powder and water in a bowl. With a hand whisk, stir until the mixture becomes homogeneous. There should be no lumps.
Wait for about five minutes for the egg white powder to properly hydrate.
Add the xanthan gum. Whisk vigorously until the mixture becomes frothy.
Put a nonstick skillet or frying pan on the stove. Spray with cooking oil. Heat in a medium setting.
Pour half of the mixture into the pan. Move the pan to let the mixture evenly disperse. Reduce the heat to low once the dough is set on the pan. Cook until the edges slightly lift. This should take about 2-3 minutes. Using a spatula, flip the wrap. Cook the other side of the dough for another 1-2 minutes.
Repeat the process with the remaining dough to cook the second wrap.
Place the wraps onto a plate. Let them cool for about 5-10 minutes. When they are warm to the touch, fill the wraps with your desired filling.
