Equipment

  • Large skillet
  • Mixing bowl
  • Baking dish
  • Spatula or spoon for mixing

Ingredients

  • 1 lb Ground beef
  • 1 medium-sized Onion finely chopped
  • 2 Bell peppers any color, diced
  • 4 Eggs beaten
  • 1 cup Rice cooked
  • ½ cup Bread crumbs
  • ½ cup Feta cheese crumbled
  • ¼ cup Parsley finely chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Extra-virgin olive oil

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and lightly grease a baking dish.
  • In a large skillet, heat the olive oil over medium heat. Add the onions and bell peppers, sautéing until they become tender.
  • Add the ground beef to the skillet, breaking it up with a spoon or spatula as it cooks. Cook until the beef is browned and cooked through.
  • In a mixing bowl, combine the cooked ground beef mixture, beaten eggs, cooked rice, bread crumbs, crumbled feta cheese, parsley, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  • Transfer the mixture into the greased baking dish, spreading it out evenly.
  • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

  • Combining flavors — Allow the ground beef, onion, and bell peppers to sauté until they develop a deep caramelized flavor. This step enhances the overall taste of the dish.
  • Even distribution — When combining the ingredients in the mixing bowl, make sure they are evenly distributed to ensure each bite is packed with flavor.
  • Serving suggestions — Pair the Koo Koo Ca Choo with a fresh green salad or some roasted vegetables for a complete and satisfying meal.
