  • 3 tablespoons Olive oil
  • 4 cloves Garlic minced
  • ½ cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • Wash the potatoes thoroughly and pat them dry. Cut them into bite-sized cubes, leaving the skin on for added texture and flavor.
  • In a large bowl, combine the olive oil, minced garlic, salt, and black pepper. Add the potato cubes to the bowl and toss them gently to coat them evenly with the mixture.
  • Spread the coated potato cubes in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure even roasting.
  • Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes, or until they are golden brown and crispy on the outside.
  • Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the roasted potatoes. Return the baking sheet to the oven for an additional 5 minutes, or until the cheese has melted and formed a golden crust.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Sprinkle the chopped fresh parsley over the top for a vibrant finishing touch.
