Ingredients
  

  • 2 pounds Potatoes preferably Yukon Gold or Russet potatoes
  • 3 tablespoons Olive oil
  • 4 cloves Garlic minced
  • 2 sprigs Fresh rosemary leaves removed and chopped
  • 2 sprigs Fresh thyme leaves removed
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions
 

  • Preheat your oven to 425°F (220°C). This high temperature will ensure that the potatoes become crispy on the outside while remaining tender on the inside.
  • Wash the potatoes thoroughly to remove any dirt or debris. If desired, you can peel the potatoes, but I personally love the texture and flavor of roasted potatoes with the skin on. Cut the potatoes into bite-sized pieces, ensuring that they are roughly the same size. This will ensure even cooking.
  • In a large bowl, combine the olive oil, minced garlic, chopped rosemary, thyme leaves, salt, and black pepper. Mix well to create a flavorful oil mixture.
  • Add the potato pieces to the bowl and toss them gently to coat them evenly with the oil mixture. Make sure each piece is well coated to ensure maximum flavor.
  • Transfer the potatoes to a baking sheet, spreading them out in a single layer. This will allow them to roast evenly and develop a crispy exterior.
  • Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes, or until they are golden brown and crispy. Remember to flip the potatoes halfway through the cooking time to ensure even browning.
  • Once the potatoes are cooked to perfection, remove them from the oven and let them cool for a few minutes. This will allow them to firm up slightly and become even crispier.
  • Serve the garlic roasted potatoes hot as a delicious side dish. They pair well with a variety of main courses, from roasted meats to grilled vegetables. Enjoy!

  • Parboil the potatoes — For extra crispy potatoes, consider parboiling them before roasting. Boil the potato pieces for about 5 minutes, then drain and let them cool before tossing them in the oil mixture and roasting them in the oven.
 
  • Spread out the potatoes — To ensure even browning, make sure to spread the potato pieces out in a single layer on the baking sheet. Crowding them together will result in steaming rather than roasting.
 
  • Flip for even browning — Flip the potatoes halfway through the cooking time to ensure that all sides become golden brown and crispy. This will give you perfectly roasted potatoes with a uniform texture.
 
  • Don't overcrowd the pan — If you're doubling the recipe or making a larger batch, use multiple baking sheets to avoid overcrowding. Overcrowding the pan can lead to uneven cooking and soggy potatoes.
