    Everyone loves Hennessy, and everyone loves a good cake. So, mixing the two would make sense. Well, we are aware that this idea might not entertain some, but we promise that it’s worth giving a try!

    This Hennessy cake recipe couldn’t be easier to make. You could definitely customize your cake. Dried fruits? Bring it on. Chocolate cake? Well, that would be a cool twist.

    Ingredients

    The cake

    • All-purpose flour — 1 ½ cups.
    • Granulated sugar — 1 cup.
    • Whole milk — ½ cup.
    • Butter — ½ cup.
    • Eggs — 3 pcs.
    • Hennessy — ½ cup.
    • Baking powder — 1 tsp.
    • Salt — ⅓ tsp.

    The frosting

    • Butter — 1 cup.
    • Sugar — 4 cups.
    • Vanilla extract — 1 tsp.
    • Hennessy — 2 tbsp.

    Instructions

    1. Preheat your oven to 350 degrees.
    1. Whisk together flour, salt, and baking powder in a mixing bowl.
    1. In another mixing bowl, combine the butter and sugar.
    1. Once the mixture is light and fluffy, add the eggs, one by one.
    1. Mix until combined.
    1. Add the Hennessy and milk to the mixture.
    1. Mix the dry and wet ingredients, until combined.
    1. Pour the batter into a cake pan.
    1. Bake for 30-50 minutes.
    1. Set it aside and let it cool.
    1. For the frosting, beat the butter until smooth in another bowl.
    1. Add the sugar slowly, mixing well.
    1. Add the Hennessy and vanilla extract. Beat until smooth.
    1. Frost the top of your cake and serve immediately.

    Substitutions

    • Butter — We strongly recommend going with unsalted butter, as it will allow you to control the amount of salt in your Hennessy cake. You will already be using salt, and the extra amount that will come with salted butter might make things harder for you.
    • Whole milk — The original Hennessy pound cake recipe calls for whole milk, and there is a reason for that. It’s simply rich and flavorful, and there is no doubt that your Hennessy cake will end up moist and tender. Still, that doesn’t mean it’s not replaceable. Your other alternatives include non-dairy milk like almond milk and soy milk. Buttermilk could also be considered, although it will have some effects on the end result.
    • Granulated sugar — Brown sugar will also do the job for you if you do not want to use white sugar. Made by mixing sugar with molasses, brown sugar provides a deep, complex, and unique layer of flavor that will somehow make your Hennessy cake even richer in taste.
    • All-purpose flour — If you’ve run out of all-purpose flour, using cake flour is one of the better choices among the rest. Gluten-free flour like almond flour and buckwheat flour will also do as well.

    Variations

    • Hennessy fruit cake — The original Hennessy cake recipe doesn’t call for fruits, and it’s already sweet as it is, but this really shouldn’t stop you. Adding some dried fruits to the mix, especially the ones like raisins and currants, will take your Hennessy cake to another level. You could also opt for fresh fruits, with berries being the best example. Just make sure to slice them evenly and go with fresh and bright ones.
    • Hennessy chocolate cake — Honestly, who doesn’t like chocolate cake? You will be surprised how well Hennessy and chocolate go together.

    Storage

    • Before storing your Hennessy cake, make sure that it is cooled completely.
    • Wrap the leftover Hennessy cake tightly in plastic wrap or aluminum foil.
    • Once stored in your fridge, the cake will last for up to a week.

    Tips

    • Hennessy — We realize that it might be tempting to use the liquor generously. Keep in mind that going overboard with the Hennessy will likely overpower other ingredients.
    • Rest — Make sure that your cake cools before topping it with the frosting since this will allow the flavor and the texture to fully develop.
    • Make ahead — If you’re short on time, you could make the dry batter ahead and store it in your fridge overnight.
