Ingredients
- Chicken — 1 pound, boneless and skinless.
- Soy sauce — 3 tbsp.
- Vinegar — 3 tbsp.
- Cherry tomatoes — 5-10 pcs.
- Cucumber — 1 pc., chopped.
- Red bell pepper — 1 pc., sliced.
- Lemon juice — 4 tbsp.
- Salt and pepper — to taste.
- Yogurt — optional.
Instructions
- Dice the chicken into small pieces.
- In a mixing bowl, combine chicken, soy sauce, lemon juice, and vinegar. Mix well.
- Cover and transfer to your fridge for a few hours.
- Add the tomatoes, cucumber, red bell pepper, salt, and pepper on a plate.
- Remove the chicken from your fridge.
- Heat some oil in a pan and add the chicken.
- Cook the chicken on low-medium heat, for about 5 minutes.
- Add the cooked chicken to your salad plate with the sauce.
- You could also add yogurt to the mix, either combining it with the other seasoning or separately.
Substitutions
- Soy sauce — A proper marinade sets the difference between an average chicken salad and a distinguished one. Soy sauce is great in marinades, as it’s not only fairly versatile but also provides a rich and deep flavor that could be hard to replace sometimes. If you will be going with soy sauce, we’d recommend using a low-sodium one to keep your salt intake in control.
Still, if you’d like to replace soy sauce, you could start with Tamari. Originating from Japan, Tamari is milder in taste, and also gluten-free. The more popular alternative to soy sauce, however, would be Worcestershire sauce, although the taste will differ a little bit.
- Vinegar — Vinegar will be one of the key ingredients of your marinade, along with soy sauce and lemon juice. It works similar to soy sauce, by providing a deep and rich flavor that is hard to replace. As a bonus, vinegar also helps tenderize your chicken, and it will help keep your salad fresh for a longer period.
White wine vinegar and apple cider vinegar will work just fine with a mild flavor, meaning that they won’t be dominating your dish by overpowering other ingredients. The most commonly used one is balsamic vinegar because it works perfectly in salads.
- Chicken — Choosing the right type of chicken will make or break your salad. The first rule? You should stay away from boned-in and skin-on ones, whether it’s chicken thighs or chicken breast. After all, we’re making a salad, so you should probably stick to the boneless and skinless ones.
Chicken breast is probably the more common alternative, but be careful not to overcook your chicken breast or you will have a dry meal. Chicken thighs are another alternative, and although they are not as popular as chicken breast, they are still commonly used in most chicken salads. Chicken thighs are likely to be more flavorful and tender, at least compared to chicken breast. If you will be going with this one, you might want to consider grilling or roasting your chicken.
