Ingredients
- Onion — 1 pc., medium-sized, chopped
- Garam masala — ¼ tsp., adjust to liking
- Oil — 2 tbsp.
- Green chili pepper — 1 pc., chopped
- Turmeric powder — ¼ tsp.
- Cilantro — for garnishing
- Cumin seeds — ½ tsp.
- Salt — to taste
- Red chili powder — 1 tsp.
- Mustard seeds — 1 pinch, optional
- Curry leaves — 1 sprig
- Tomato — ¾ cup, chopped
- Ginger — 1 tsp., chopped
- Coconut milk — ¼ cup
- Coriander powder — 1 tsp.
- Yellow squash — 1 pc., medium-sized, cubed
Instructions
- Heat some oil in a pan.
- Add the curry leaves, cumin seeds, and mustard to the pan.
- Then sauté the onion, ginger garlic paste, and green chili pepper.
- After sauteing these ingredients, add the tomatoes and form a gravy.
- Add the squash and all of the seasonings. Cover the pan with a lid and cook it. You may need to add a little water to it.
- After cooking up the squash, add coconut milk to thicken the gravy and let the gravy simmer for a few minutes.
- Turn off the stove and then garnish the curry with coriander powder.
- Serve with plain rice or any other side.
Substitutions
- Coconut milk — If you don't have coconut milk, don’t worry. Try adding almond milk to the dish. To achieve the same consistency, you need to add 1 tsp. of cornstarch into the almond milk to make it thicker.
- Turmeric powder — This Indian yellow squash recipe gets an earthy taste and vibrant color from turmeric powder. If you don't have it, you can use ground cumin or cardamom in place of it. However, the same vibrant color may be compromised though.
- Tomato — If you have no tomatoes, try yogurt to give it the perfect tanginess that this dish requires.
Variations
- Yellow squash fritters — Try making fritters of yellow squash. Make the batter by mixing eggs, all-purpose flour, and your preferred seasonings then coat the cubed yellow squash into it and deep fry them in heated oil.
- Yellow squash casserole — Add a layer of yellow squash then add your sauteed vegetables and then layer with bread crumbs and bake it to have a delicious casserole.
