    Ingredients

    1. For the custard

    • Water — ¼ cup

    Instructions

    For the custard

    1. Mix the gelatin into the water in a bowl, and let the mixture sit aside to absorb the water.
    1. Take a pan and heat half a cup of sugar, salt, cream, and vanilla bean. Make sure you stir continuously.
    1. In another bowl, mix the leftover sugar, eggs, and egg yolks. Then, add the ⅓ of the cream mixture you prepared above. Whisk well.
    1. Combine this mixture with the leftover cream mixture. Add the gelatin to it, and stir well, ensuring that there are no lumps.
    1. Add the puree of ripe bananas and lemon juice.
    1. Transfer the custard to a bowl and cover the top of the bowl with plastic wrap. Place it in the fridge to cool for a minimum of three hours.

    For assembly

    1. Before assembling the pudding, crumble the vanilla wafers, and then mix the banana slices with yogurt and lemon juice in another bowl and set them aside.
    1. Whip the moonshine, cream, and sugar using a mixer.
    1. Finally, take a parfait glass. Add a layer of custard, then vanilla wafers and sliced bananas. Repeat it two more times, and then top it with the prepared whipped cream.
    1. Let the pudding chill for four hours and serve.

    Substitutions
