    Substitutions

    • Baking soda — Acting as a leavening agent, baking soda is a crucial ingredient in most baking recipes, and that includes Bob Evans banana bread recipe as well. This one will make your banana bread all light and fluffy.
It is the best ingredient, but if you’re desperate, you could also use baking powder, even though your banana bread will have a slightly different texture and flavor. Yeast would be another alternative, although you will end up with different results.
    • Granulated sugar — In addition to adding sweetness, granulated sugar helps with the texture of your dish, making it fluffy and light. If you’d like to go with a lighter alternative, try brown sugar. It has a deeper, richer, and more complex flavor; which could be a good thing. Honey could also work, but you might get a different taste.
    • Flour — If all-purpose flour is not available, then you might want to consider using cake flour. Your banana bread will end up with a different texture and consistency, though.
    • Sour cream — Sour cream, much like flour, sugar, and baking soda; helps create a tender and soft texture for your banana bread. The important thing when it comes to sour cream is that it will add some much-needed moisture and richness to your batter.
Buttermilk, to begin with, is perhaps the ideal replacement for sour milk. It has enough acidity, and the texture will be similar to the original one. Using Greek yogurt, on the other hand, will produce different results, albeit it will still work fine.

    Variations

    • Gluten-free — We just couldn’t share this delicious Bob Evans banana bread recipe without at least giving a mention to the gluten-free variations. Why not try almond flour or oat flour? Coconut flour could also be considered, though the other two will no doubt be more similar to your ordinary banana bread.
    • Chocolate chip banana bread — You might think that this Bob Evans banana bread recipe really couldn’t get any better. Everything's better with chocolate, so try adding a cup of chocolate chips to your batter the next time you make this banana bread.
    • Nutty banana bread — For those who love nuts, take some chopped nuts like walnuts, almonds, or maybe pecans. Your dish will end up being crunchy, firm, and delicious.
