    Instructions

    1. Preheat the oven to 350 degrees F and spray an oven-safe baking dish with cooking oil.
    1. Arrange the rotisserie chicken uniformly in a layer at the bottom of the baking dish.
    1. In a large bowl, mix the buttermilk and cheddar biscuit mix (along with the spice pack) until it blends seamlessly. Distribute the mixture uniformly over the chicken.
    1. Top the mixture with the mixed frozen vegetables.
    1. Add and mix the chicken broth, heavy cream, dried herbs, and spices in a medium-sized bowl.
    1. Pour the mixture uniformly over the vegetables. There is no need to mix.
    1. To achieve the perfect dish, the baking dish must be placed in the preheated oven for no more than 60 minutes. You’ll know when it is ready when the surface will set and will be golden brown.
    1. Take the dish out of the oven and allow it to cool to room temperature.

    Substitutions

    • Rotisserie chicken — There is nothing easier than using rotisserie chicken for our cobbler recipe. If you prefer to cook the meat yourself, you can cook some chicken breast and then shred it, but you can also choose to include cooked ground chicken or ground turkey. No matter the substitution you make, don’t forget to season the meat to achieve a flavorful taste.
    • Cheddar biscuit mix — The irresistible savory and cheesy flavor of the cheddar biscuit mix is an absolute delight, as it adds a special note and takes the recipe to the next level. You can also create your biscuit dough from scratch by combining flour, butter, milk, baking powder, salt, and shredded cheddar cheese. You can also use premade pie crust or puff pastry if you don’t have cheddar biscuit mix in your kitchen, as they are good substitution options.
    • Chicken broth — Use vegetable broth to replace the chicken broth, as it will provide an almost identical flavor profile while adding moisture to the mixture.
    • Dried parsley — Adding freshness and a bright green note to the dish, parsley can be easily replaced with dried thyme, sage, or oregano.

    • Add flavor — Add a sprinkle of ground cumin or smoked paprika for an elevated and complex flavor.
    • Add texture — Include a handful of chopped almonds or pecans to the dish to add a nutty and crunchy texture.
    • Low-fat — To decrease the dish's fat content, substitute buttermilk and heavy cream with plain Greek yogurt and low-fat or fat-free milk.
    • Vegetarian — Tofu can be used instead of rotisserie chicken for a vegetarian variation. Cut the tofu into small cubes, sauté it until lightly browned, and include it in the recipe. Also, don’t forget to swap the chicken stock for vegetable broth.
