Instructions
- Combine the egg white powder and water in a bowl. With a hand whisk, stir until the mixture becomes homogeneous. There should be no lumps.
- Wait for about five minutes for the egg white powder to properly hydrate.
- Add the xanthan gum. Whisk vigorously until the mixture becomes frothy.
- Put a nonstick skillet or frying pan on the stove. Spray with cooking oil. Heat in a medium setting.
- Pour half of the mixture into the pan. Move the pan to let the mixture evenly disperse. Reduce the heat to low once the dough is set on the pan. Cook until the edges slightly lift. This should take about 2-3 minutes. Using a spatula, flip the wrap. Cook the other side of the dough for another 1-2 minutes.
- Repeat the process with the remaining dough to cook the second wrap.
- Place the wraps onto a plate. Let them cool for about 5-10 minutes. When they are warm to the touch, fill the wraps with your desired filling.
Substitutions
- Spray cooking oil — You can use 1 tsp. of butter for greasing the pan. You need softened, room-temperature butter. With a cooking brush, coat the bottom of the pan.
- Xanthan gum — Guar gum is a natural thickening agent produced from the guar plant. You can use it to get a similar texture. Start with the same amount of guar gum as the recipe calls for xanthan gum.
Variations
- Make it with egg whites — If you don’t have egg white powder or want to cook the wraps with eggs, you can alter the recipe. Use four large eggs and carefully separate the yolks from the whites. Make sure that they are at room temperature. If you use egg whites, omit the water and use the same amount of xanthan gum. Adding a pinch of salt before whisking the egg whites is best. Add the xanthan gum when the egg whites become frothy and form soft peaks.
- Make it vegan — This is an egg white recipe, but you still have a vegan option. The magic ingredient is aquafaba. You will need a cup of aquafaba and the same amount of xanthan or guar gum for this recipe. The tricky part is to vigorously whisk the aquafaba to gain volume. You can add the thickening agent when it gets frothy and soft peaks form.
