Tortillas are great, but they might be the most basic form of food and can get boring. Luckily, there is a great alternative for tortillas — this gorditas recipe with Maseca.

But what makes them so much better? Well, to begin with, as the name of the recipe suggests, they are made with Maseca, the best that Masa Harina gets. This makes them healthier, lighter, and even more delicious. But you can make tortillas with Masa Harina as well. However, the unique thing about gorditas is that they are considerably thicker than your average tortillas, which means you can fill them with your favorite stuffings. Don’t stop at beef and beans, and work your imagination.

    Ingredients

    • Maseca (Masa Harina) — 2 cups
    • Hot water — 1 ½ cups
    • Salt — ½ tsp.
    • Olive oil — 2 tbsp.

    Instructions

    1. Combine the Maseca with salt and hot water in a large mixing bowl.
    1. Using your hands, mix together and form the dough into 8-9 equal-sized balls.
    1. Flatten the balls using a tortilla press.
    1. Heat some oil in a skillet.
    1. Fry the gorditas, one at a time, frying on both sides.
    1. Once both sides are golden brown, which should take about 3 minutes or so per side, remove from the heat and place on top of paper towels to drain.
    1. Repeat until you are out of dough.

    Substitutions

    • Olive oil — This gorditas recipe with Maseca calls for olive oil, but that is entirely dependent on you. Any kind of oil with a high smoke point would do. That includes vegetable oil and sunflower oil as well.

    Variations

    • The stuffing — This gorditas recipe with Maseca is pretty basic, it only includes the necessary ingredients and steps. As you might have guessed, there is so much more to make gorditas. That brings us to the stuffing. For a more filling experience, simply split them with a knife and put your favorite stuffings inside. Some of the most common ones are beef, cheese, beans, vegetables like tomatoes, pickles, and so much more!
    • Not colorful enough? — Although these gorditas are perfect, you can also have them in blue! How? Although the flavor is the same, a blue Maseca is also available in most stores. Blue gorditas have the same perfect taste but are much more colorful!

    Equipment

    • Measuring cups and spoons
    • Mixing bowl
    • Skillet
    • Paper towels
    • Knife

    Storage

    • You can store the gorditas at room temperature for about 12 hours. After that, it will go bad quickly.
    • It is recommended to refrigerate the leftover gorditas. Transfer them to an airtight container and store them in your fridge, where they will last for four days.

    Pro Tips

    • Too soggy? — If you realize that your dough has ended up somewhat soggy, add some more flour to the mix to solve the problem.
    • Too dry? — A dry dough is a common pitfall, but it should be okay if you realize it soon enough. Add more hot water to the mix, and you should be okay.
