1. Base
- Graffiti eggplant — 1 pc., large
- Kosher salt — 1 ½ tsp.
- Black pepper — 1 ½ tsp.
2. The marinade
- Soy sauce — 2 tbsp.
- Olive oil — 3 tbsp.
- Smoked paprika — 1 tsp.
- Lemon juice — ¼ cup
- Dijon mustard — 1 tbsp.
Instructions
- Set your oven to 400°F.
- Add each marinade ingredient into a mixing bowl.
- Give it a good mix and set it aside for now.
- Cut the stems from the eggplant, and thinly slice it.
- Sprinkle kosher salt and black pepper over the sliced eggplant.
- Transfer the eggplant slices to a baking tray.
- Gently and swiftly brush the marinade on both sides of the eggplant slices.
- Roast for 20 minutes per side.
Substitutions
- Soy sauce — Graffiti eggplant is fine on its own, so you can obviously omit soy sauce. If soy sauce is not your thing or you are short on it, you might want to consider using Tamari instead. The Worcestershire sauce would be another alternative to soy sauce. Lastly, fish sauce could be considered, although you would probably be better off using the first two alternatives.
- Lemon juice — If you’re out of lemon juice, lime juice is the ideal replacement, while citrus juice like orange juice won’t let you down either. Vinegar, on the other hand, will provide your marinade with some depth and flavor, and apple cider vinegar would be even better.
- Dijon mustard — If you are not interested in Dijon mustard, feel free to use yellow mustard or spicy brown mustard.
Variations
- Cheesy — A good topping can take an average dish to the next level. Although our Graffiti eggplant recipe is delicious as is, it can always get better. If you are up for some experimentation, we would recommend topping your dish with some grated cheese, while it is still hot.
