    Substitutions

    • Skirt steak — Skirt steak is used in this recipe for its juicy and tender texture. Flank steak can be a good choice also. Having a similar flavor and texture, you won’t even notice a big difference.
    • Mayonnaise — Mayonnaise is the heart of the marinade, but whole Greek yogurt can be considered as a replacement option.
    • Lemon juice — If you need a replacement for lemon juice, the most common substitute is lime juice.
    • Goya Adobo seasoning — The famous Lupe Tortilla fajita recipe features Goya Adobo seasoning to enhance the flavors of the meat. If you don’t have it in your pantry, easily swap it for fajita seasoning. If you want to play with spices, mix garlic powder, onion powder, dried oregano, salt, and black pepper to get a similar seasoning mix.

    Variations

    • To add color — To add more color to the fajita, you can use freshly chopped herbs such as cilantro or parsley.
    • Egg-free — If eggs are not your favorite in mayo, go for vegan-free mayo instead of regular ones.
    • Low-fat — For a reduced fat and calorie version, forget about the mayo and use low-fat Greek yogurt. Substitute the skirt steak with turkey or chicken breast for a lighter recipe.
