    Ingredients

    • Olive oil — 2 tbsp.
    • Minced garlic cloves — 3 pcs.
    • Medium sliced lemon — 1 pc.
    • Salted butter — 4 tbsp.
    • Chopped parsley — ¼ cup
    • One capers bottle — 3 oz.
    • Cooked jasmine rice — 1 cup
    • Snapper — 2 lb.
    • Salt — 1 tsp.
    • Pepper — 1 tsp.

    Instructions

    1. Dry the snapper using a paper towel, and then cook the snapper in a skillet using olive oil for about 5 min. On each side.
    1. Remove the snapper from the skillet. Using the same skillet, melt the butter. Caramelize the lemon slices in it and then take them out onto a separate plate.
    1. Cook the garlic cloves for 1 min. in the same skillet, and then add the capers and snapper. Cook them for 3 mins.
    1. While the snapper and sauce are cooking, warm up the cooked jasmine rice.
    1. After the sauce and snapper have been cooked perfectly, take them out and sprinkle salt and pepper on them.
    1. Serve the snapper over a bed of cooked jasmine rice.
    1. Garnish the mangrove snapper using chopped parsley and the caramelized lemon slices on top before serving.

    Substitutions

    • Olive oil — Olive oil is used to make this mangrove snapper recipe, but you can use any oil which is heat resistant. Try using vegetable oil, sesame, or canola oil. These oils are as healthy as olive oil, and the taste of mangrove snapper won't be compromised by using them.
    •  Snapper — If you don't have snapper easily available, then you can use any other white fish but the taste may vary a bit. I would personally recommend using snapper only for this recipe to have the same great taste for which the recipe is famous.
    • Capers — Capers are used to give this mangrove snapper recipe extra taste, but if you are not a fan of its taste, then you can use chopped green olives and cook them with snapper and sauce. These green olives will add an edge to your recipe.
