    There’s a good chance that you might’ve heard of Morrisons, a chain supermarket located in the UK, mostly famous for its macaroni cheese. The grams replace the cups, and mac and cheese make way for macaroni. Still, that doesn’t change how good the Morrisons macaroni cheese recipe is. Let’s take a look.

    Ingredients

    • Macaroni pasta — 8 oz.
    • Cooking oil — 2 tbsp.
    • All-purpose flour — 1 cup.
    • Onions — 2 pcs., large.
    • Parsnips — ½ cup.
    • Peas — 1 cup, frozen.
    • Mustard — 1 tsp.
    • Cheddar cheese — ½ cup.
    • Margarine — ¼ cup.
    • Oat milk — 2 ½ cups, unsweetened.
    • Butter — 1 tbsp.

    Instructions

    1. Preheat the oven to 400 degrees.
    1. Finely chop the onions and the parsnips.
    1. Heat some oil and add the vegetables. Cook for 10-15 minutes.
    1. Cook the pasta according to the package directions. Add the frozen peas near the end, a few minutes before turning off the heat.
    1. Drain the pasta after cooking.
    1. Melt some butter in a saucepan.
    1. Stir in the flour, and after a minute or two, add the milk.
    1. Stir well until the mixture thickens.
    1. Let the sauce boil for half a minute, and add the cheddar cheese and mustard.
    1. Combine the pasta with the sauce. Toss well to coat.

    Substitutions

    • Frozen peas — Frozen peas work great in this dish, but if they are not your cup of tea, sweet corn will do wonders. Chopped mushrooms or beans (lentils, lima beans, or black-eyed beans) would be fine too.
    • Cheddar cheese — Cheddar is the king of grated cheeses, as you might’ve noticed by now. It has a flavor and is not a fancy and expensive one either. If you’re short of cheddar, you might consider American cheese. Swiss cheese and Colby cheese are other alternatives.
    • Margarine — In the original Morrisons macaroni cheese recipe, margarine is used. It’s hard to choose something unhealthier, so you could choose to use oil. Coconut oil, canola oil, avocado oil, or olive oil would be better choices, and butter too. Use a 1/1 ratio.
    • Unsweetened oat milk — Unsweetened oat milk works well, resulting in a creamy macaroni cheese with a smoother texture. If you are on a dairy-free diet, you’re probably better off going with oat milk. If you’d prefer a proper dairy product, whole milk would do the job for you.

    Variations

    • Dairy-free — Morrisons used unsweetened oat milk, which is completely dairy-free. As for substitutes for cheddar cheese, there are still some other alternatives. Almond cheese or tofu would be great. Instead of butter/margarine, you could use oil.
    • Vegan — Oat milk is also vegan-friendly. You could swap butter and margarine with your preferred cooking oil. If you can find vegan cheese, go for it.

    • Measuring spoons and cups.
    • Oven.
    • Saucepan.

    Storage

    • You should refrigerate the leftover macaroni cheese within two hours of cooking. Transfer the leftover macaroni cheese to a shallow airtight container.
    • Store it in your refrigerator, where it will last for up to a week at most.
    • You could also freeze your macaroni cheese using a freezer bag. Store it in your freezer and it will last for up to 3-4 months.

    Tips

    • The pasta — Add a pinch of salt to the pasta water, to help it to cook properly.
    • The sauce — You should keep a constant eye on the sauce as it tends to burn quickly.
