    1. Colombian or Venezuelan?

    What makes South American culture so great is that it's ethnically mixed, with influences from various ethnicities. Thus, it shouldn’t come as a surprise that the recipes differ from one country to another. It is also the same when it comes to arepas con queso recipes, with the common ones in Colombia and Venezuela differing a little bit.

    The main difference is that in Venezuela, they make the dough fattier, so it is not as light as its Colombian counterpart. The fillings differ, too. In Venezuela, arepas are usually paired with beans or beef, making them more suited for late-night snacks or quick dinners. In Colombia, however, the dough doesn’t include any salt or oil. Arepas con queso can also be eaten for breakfast. 

    2. How to choose the right flour

    The dough is the most essential thing when it comes to preparing a delicious con arepas queso. If you want to do this by the book, going with masarepa would be the best. A precooked corn flour, it is very popular in Venezuela and Colombia. You can find masarepa at the nearest Latin American food store. However, if you can’t find it, you can also go with masa harina. They are both the most commonly used flours in South American cooking, but they have their differences. Masa harina is mostly used for making tortillas, and it has a harder texture, with less starch content. For a more delicious arepas con queso, we recommend using masarepa.

    • 2 cups masarepa precooked corn flour.
    • 1 cup water.
    • ½ cup milk.
    • ¼ cup butter.
    • ½ teaspoon salt.
    • 1 ½ cups Mozzarella cheese, grated.
    • 1 tbsp. vegetable or canola oil.
