Ingredients
- Strawberry — 7 oz., stems removed, chopped, and frozen
- Ice cubes — 7 oz.
- Protein powder — ½ cup
- Xanthan gum — ¾ tsp.
- Unsweetened almond milk — ⅔ cup
- Berries (strawberry, cranberry, blackberry, etc.) — 2 tsp., to garnish
Instructions
- Before getting strawberries and ice cubes from the freezer, make your food processor or blender ready to work. Ensure the food processor/blender is suitable for processing ice cubes.
- Put frozen strawberries and ice cubes in the food processor/blender container and pulse in short intervals. When they resemble a crumbly appearance, add protein powder, xanthan gum, and almond milk. Pulse until you get a homogeneous mixture.
- Put the ice cream mixture into a freezer container. You can also divide it into ice cream molds.
- If you are serving it immediately, divide it into serving bowls and garnish it with fresh berries of your choice.
Substitutions
- Unsweetened almond milk — You can substitute the almond milk with another plant-based alternative such as oat, cashew, or coconut milk. Ensure these are also unsweetened since sweetened varieties may go against anabolic diet principles.
- Strawberry — For the fruit base of the ice cream, you can use other frozen berries instead. Cranberry, blackberry, blueberry, and black mulberry all work for this mixture.
Variations
- Sweeten it more — The original recipe doesn’t call for any extra sweeteners. But especially if your berry choice is more on the sour side, you may add ¼ tsp. of artificial sweetener or stevia to the mixture. Frozen bananas instead of berries are another way to add that extra sweetness.
- Make it additive-free — Xanthan gum is the thickening agent that gives the mixture its dense consistency. Some people may have a hard time tolerating this additive. So, you can substitute it with guar gum. Guar gum is made from a seed native to East Asia and functions the same as xanthan gum. Another method is to use a protein powder containing casein. If you decide not to use any thickening agent, add an extra teaspoon of protein powder.
- Make it vegan — Most common protein powder types are whey and casein. To make a vegan version, choose a plant-based protein powder.
