    Substitutions

    • Curd — Curd is used in place of egg in this Eggleston cake recipe and gives this cake a moist and spongy taste. But if you are out of curd, then you can use Greek yogurt, heavy cream, or cream cheese, which will give almost the same taste and softness that this Eggleston cake is famous for.
    • Refined sugar — If you are out of sugar or want to try something new, add maple syrup or honey to the batter. It will elevate the taste of the cake.
    • All-purpose flour — If you are out of all-purpose flour, substitute with almond flour or rice flour. For a healthier option, use chickpea flour instead.

    Variations

    • Chocolate Eggleston cake — Try this chocolatey version of the Eggleston cake recipe by adding cocoa powder while making the batter. Moreover, sprinkle crumbled chocolate chip cookies or melted chocolate to make the cake more chocolatey.
    •  Tropical Eggleston cake — Use mixed fruit flavoring while making the batter. Top the Eggleston cake with mixed fruits like strawberries, pineapple, mango, etc.
